It all began when, after eating a mouthful of sauerkraut*, my husband Stefano said:"Tell me, why can't fermented foods be tasty?"
I am a dietitian and it's my mission to help people eat well, and fermented foods are just so good for you. So I took on the challenge to make a fermented, but tasty, treat.
I enlisted the help of a pastry chef, a microbiologist and a fermentation expert to help me create these delicious - and super gut-friendly - Fermenti bio bites.

RASPBERRIES AND BLUEBERRIES
Rich in polyphenols and prebiotic fiber
Berries are high in polyphenols, flavonoids and fibre which nourish our beneficial gut bugs. They are also an excellent source of Vitamin C. Each cultured cookie contains about 3 berries.
CASHEWS
A real superfood
Cashews are particularly rich in mono-unsaturated fats, Vitamin E, Vitamin B6, iron, magnesium, manganese and fibre. They also contain a good proportion of protein.

Nourishing and delicious
Nutrients and benefits of peanuts are similar to other nuts. It is a relatively cheap and very nourishing ingredient. We use it in one of our fillings. It tends to hide the taste of the fruits, but some people can’t get enough of it.
It is the basic ingredient of our natural fermentation, providing 18 billion live cultures from more than 35 different strains per cookie. Coconut is a source of selenium, copper, manganese and fibre. Its saturated fat is made of medium-chain fatty acids, which have been associated with improved cognitive function.

Cocoa butter is high in vitamin D2, a precursor to the active form of vitamin D in the body. It is also rich in minerals, such as potassium, phosphorus, iron, copper, and magnesium.
Nuts are rich in fibre, polyphenols and unsaturated fats and are considered as a cardio protective food. Almonds are also particularly rich in calcium, magnesium and potassium and have been shown to positively alter gut microbiome composition.



PURE MAPLE SYRUP
Our natural sweetener
Maple syrup is the sap collected from maple trees in springtime which is then cooked into a syrup. We have chosen maple syrup because it is a nutritious unrefined natural sweetener containing manganese, magnesium, zinc and Vitamin B2. We use a limited amount to counterbalance the tangyness of the raspberries.
